Nigerian Jollof Rice

 


   Jollof Rice is a West African dish that is staple in most households. It is a classic Nigerian rice dish flavored with tomatoes, peppers, and lots of Seasoning.

  Jollof Rice making involves different and lot of spicy, but it's simple and easy to cook. It is a everyday meal in Nigeria and Ghana. If you go to a eatery, you would definitely find it as a daily food to sell and buy.

  Nigerian Jollof Rice is usually made from using Tomatoes, peppers, Tomato Paste, scotch bonnet, onions, beef stock, rice, and other spices.


Here are the ingredients to make Nigerian Jollof Rice

2 Cups of rice

Beef stock

1 tsp salt to taste

1 Maggi cube

5 medium sized Tomatoes

3 bay leaves

1 red bell pepper

1/4 cup of groundnut oil

1/2 tsp Curry powder

1/2 thyme

4 tsp of tomatoe paste

Water for cooking


INSTRUCTIONS

Wash away the starch of the rice and parboil for 15minutes. 

Alongside, blend the Tomatoes, Onions, And Pepper in a blender. Blend till smooth. Seasoning beef with Curry Powder, thyme, salt, onions, and Maggi. And cook for 20minutes. 

After the rice is parboiled, pour in groundnut oil into another pot, begin to heat, slice in onions, let it fry for some minutes, then add your blended pepper and tomato paste to it. Add in water, salt, Maggie, Curry powder, thyme, bay leaves, beef/chicken stock. Cover the pot, and wait to boil for 5minutes.

After 5minutes, simply add in your parboiled rice. Wait for another 10minutes for it to be fully prepared.

You can add vegetables (sweet corn,green peas, carrot, and the rest) if you wish.

You can then go ahead to fry the beef or chicken. Any of your choice.


Your delicious Nigerian Jollof Rice is ready.
